MAPISHI YA LEO

Chicken Stuffed with Mustard and Creme Cheese Wrapped in Parma Ham

Ingredients
2 Large chicken breasts - ideally corn-fed/ free range
2 tblspoons Wholegrain Mustard
2 tblspoons Creme cheese
6 slices Parma ham

Method
Cut a slice in the side of the chicken breast ready for the filling. Mix the mustard and cremecheese and stuff it into the chicken. Wrap the parma ham around the chicken so it is covered. Put the chicken in tin-foil into a hot oven - cook for 30 mins. Serve with a salad.
 
Tips

Getting the right mix of mustard and creme cheese depends on your taste - experiment!

Remove the foil halfway through to crisp up the parma ham. 

Rolling the parma ham around the chicken takes a bit of practice.

This is a great dish for guys to cook for the lady in their lives - simple to cook but looks very impressive and is healthy - ideal for Valentines day!
